Quick Chia Taco Salad

DIRECTIONS:

In a skillet, brown and drain the fat from the ground meat. Lower the heat and add the ketchup, chia gel, cumin, and chili powder and stir.

Place the lettuce greens on four plates and evenly divide the meat mixture, tomatoes, avocados, etc. Top with shredded cheese and the dressing.

How to make an edible bowl:

Warm 4 tortilla shells in the microwave for 20 seconds. Spray both sides of each with cooking spray. Place over an inverted empty, clean coffee can or other large container. Lightly shape the way you want them to drape. Bake at 425 degrees for about 10 minutes on a baking sheet. Once lightly browned, remove from the oven and let the bowls cool so that they become firm.

These bowls can be made earlier in the day and stored in an airtight container until fiesta time.

1 pound ground beef, chicken,

OR turkey

2 chopped rings of a large red

onion

⅓ cup ketchup

2 tablespoons of chia gel

2 teaspoons chili powder

1 teaspoon ground cumin

6 handfuls salad greens of your choice

2 chopped tomatoes

1 thinly sliced avocado

6 sliced black olives

¼ cup grated sharp cheddar cheese

Just a Little Kick dressing (see page 149)

tortilla chips or rounds to make the

bowls
